Miri, Sarawak. Last weekend, me & Qilah taiseliur kan makan seafood, iatah si Wandi & Zy mempelawa kami ke Miri pasal disana ada tampat seafood yang nyaman and the tampat is so lawa especially untuk family apatah lagi untuk couplekan bedating. The restaurant it self is banar-banar siring pantai, inda payah pakai kipas pun anginnya disana sudah cukup sajuk.

Juggling between uni work and house chores leave for very little time to cook fancy sungkai meals (and trust me, a student budget does not stretch to accommodate daily restaurant trips either). But, Alhamdulillah, we're happy with what we can cook up from scratch.
Today's menu was a simple and satisfying 'student meal on a budget':

Banana & Almond Cupcakes
Sometimes we have friends over for sungkai, other times we head out for the obligatory once a week sungkai beramai-ramai, most of the time, we're happy to just sit together as a family and enjoy a quiet meal. Today, as you can tell, it was a cosy, quiet sungkai at home.
This has to be my most favourite cupcake, and they're soooo easy to make!!! Thought i'd leave the Love Food, Hate Waste readers my recipe:
Banana & Almond Cupcakes
• 1 large very ripe banana (mashed) • 1 large egg • 20g melted butter • 4 tablespoon brown sugar • ½ teaspoon vanilla essence • 3 heaped tablespoon plain flour • 1 ½ heaped tablespoon self raising flour • a handful of roasted unsalted chopped almonds
Directions (recipe makes 6):
Mix mashed banana, melted butter, egg, sugar and vanilla essence together. Once thoroughly combined, fold in flour and chopped almonds. Scoop into cupcake mould, bake at 150 celcius for 20 minutes or until golden.
Top with your favourite frosting. (Delicious with cream cheese frosting or chocolate ganache!)
ok, this is an interesting note.. Though I've mentioned as Orchid Garden Hotel being the trend setter, according to Sheikh Khalid of arab-families.com, The Holiday Lodge was the first of many that actually started the Sungkai buffet among all the hotels and the idea of "Sungkai-ing" out become a culture after a few years later.
To tell you frankly, it was my first time breaking fast at Holiday Lodge, and surprisingly not bad.. There is grilled stuff to choose from and even different types of pasta as well. As usual, I'm not a big eater of especially during Sungkai but man, I still have a tummy to deal with.

Last week, the local bloggers had an honour to meet up with the one-night sensation popularly known as Zek-Zek as we hosted him at the Holiday Lodge. Present were TigerLim™, Kurapak, Mr. RA and Aziz Idris of Borneo Bulletin. Zek was accompanied by his friends, two of them from the Nasi Katok Production. I also had a pleasure of bumping into the Russian Ambassador to Brunei who currently resides at The Holiday Lodge.

Short video interview with 'Prince of the earth' Kachinggssss~
The Red Canopy Cafe serve local cuisine for their Ramadhan Buffet, i brought my good friend Areeve with his girl(Shira) who came from semenanjung, Kuala Lumpur for a weekend visit.
I love their Kampomg Fried Rice, the spicy taste of its kampong style along with the pusu were great! It was good that Shira likes it that she told me it tasted just like her auntie's cooking back in Malaysia.
Other dishes they serve here are the equally excellent was Ayam Masak Merah, how i wish i can cook the same way as they do! Actually, just the ayam it self with nasi putih is already cukup for me :)
All in all, puas jua hati kami, and now it's time for cruising, Happy Ramadhan Peeps!
